Gesch;ttelt oder ger;hrt?

Klassisch wird ein Martini im R;hrglas ger;hrt, da sich die Spirituosen leicht verbinden und der Drink im Glas klar bleibt. James Bond bevorzugt seine Martinis hingegen in einem Cocktail-Shaker gesch;ttelt. Dadurch wird der Drink zwar schneller kalt, ist aber im Glas zun;chst milchig-tr;b und kl;rt sich erst mit der Zeit, wenn die kleinen Luftbl;schen aufsteigen. Um kleinste Eissplitter zur;ckzuhalten, kann beim Abseihen eines gesch;ttelten Martinis ein zus;tzliches feines Sieb verwendet werden (fachsprachlich doppelt abseihen).

Eine naturwissenschaftliche Untersuchung der unterschiedlichen Mischungs-Methoden fand im Labor mittels Luminol-Test statt:[11] Gesch;ttelte Martinis haben eine st;rker antioxidative Wirkung als ger;hrte. Dies bewirkt zwar vor allem der Wermut-Anteil, aber erst die Mischung mit Gin f;hrt zu einem optimalen Ergebnis (maximale antioxidative Wirkung).[12]

Da ein Martini stets „straight up“ serviert wird, das verwendete Eis also beim Abseihen im Mixgef;; zur;ckbleibt, werden die Cocktailgl;ser f;r gew;hnlich vorgek;hlt (gefrostet). Seltener sind spezielle Martini Chiller, also Kelche ohne Stiel, die nach dem Servieren in einem zuvor mit Crushed Ice gef;llten Beh;lter ruhen (siehe Abbildung unten). Zum Teil werden auch die Zutaten und/oder die Mixutensilien vor der Zubereitung gek;hlt. Aroma und Geschmack des Cocktails h;ngen nicht zuletzt von der K;lte ab. Wird sie nicht erreicht, kann ein Martini fad schmecken, was bei zu wenig oder zu warmem Eis oder zu kurzem R;hren oder Sch;tteln passiert. Zu wenig oder zu warmes Eis f;hrt dazu, dass der Drink durch das Schmelzwasser stark verw;ssert. Umgekehrt ist ein gewisser Anteil von Schmelzwasser aber durchaus erw;nscht und tr;gt zu einem runden Geschmacksbild bei.

Es gibt zwei klassische Martini-Garnituren. Oft wird eine in Lake (keinesfalls in ;l) eingelegte gr;ne Olive mit Stein verwendet, die an einem Cocktailpick befestigt in den Drink gegeben wird. Die Verwendung von (mit roter Paprikapaste) gef;llten Oliven gilt als Fauxpas. Es k;nnen auch mehrere Oliven verwendet und aufgespie;t ;ber den Glasrand gelegt werden, seltener werden sie separat serviert. Die zweite M;glichkeit ist die Garnitur mit einem St;ck Zitronenschale, vor allem, wenn der verwendete Gin Zitrusnoten aufweist oder wenn beim Mixen zus;tzlich Orangenbitter verwendet wurde. Dazu wird ein etwa daumengro;es St;ck Schale mit einem Zestenrei;er oder einem Sparsch;ler sehr d;nn abgeschnitten. Bevor die Zeste am Glasrand oder im Drink landet, werden die Enden direkt ;ber der Fl;ssigkeit gegeneinander verdreht, so dass die ;therischen ;le aus der Schale die Oberfl;che des Cocktails benetzen, fachsprachlich wird der Drink „abgespritzt“ (Twist). Oft wird auch noch der Glasrand kurz mit der gelben Seite der Zeste abgerieben.
